Chouriço Tradicional Beira Baixa is a typical sausage from the Beira Baixa region in Portugal.
It is made from pork, generally the fattest parts with the least muscle, which is seasoned with salt, garlic and paprika.
The meat is minced and mixed with seasonings, then stuffed into natural pork casings. The curing process is carried out in a natural way. The result is an intensely flavoured chorizo with a firm and succulent texture. It is a traditional and much appreciated product in Portuguese cuisine and can be eaten raw, boiled, grilled or fried and used in several dishes, such as "cozido à portuguesa" and feijoada. It is also widely used as a snack, accompanied by bread and wine.
