Our reserve palette is in fact an authentic gourmet palette! It is obtained from the hand of Black Pig, with an intense aroma, cured and persistent. With a premium quality, each cured paleta keeps all the excellence characteristics, such as its natural greasiness (from the fat), giving it a marbled appearance with ruby and shiny tones. This palette has a slightly salty and slightly acidulous flavour. Demonstrating all the flavour of the cured palette, in the RESERVA variety.

MerceariaThe paleta of pork from Porco Preto de Alentejana breed is made from the front legs of the pig. The paleta is obtained through a slow and traditional curing process of at least 18 months. It has a mild and not very salty taste.
Did you know that the Alentejo breed pig grazes in total freedom in the montado during 18 to 24 months, in an extensive regime and walks 2 to 3 hectares a day, in search of food, acorns and pasture. The pure and fresh air and all the natural climatic conditions of the small town of Barrancos are fundamental in the curing of the Ham, which is slow and natural, unlike the others that exist, which are cured by the smoking process.

Ingredients: Black Pig's Hands (97%), salt, sugars, antioxidant sodium ascorbate (E-301), preservatives: Potassium nitrate and Sodium nitrite (E-252 and E-250).
