BANANA PANCAKES
Ingredients
- 2 eggs
- 1 mashed banana
- 2 tablespoons oat flour
- 1 teaspoon cinnamon
Preparation
Crush the banana with the help of a fork. Add the eggs and stir.
Then mix the flour and cinnamon with the previous preparation.
Heat a non-stick frying pan (if necessary, grease with olive oil or coconut oil).
Over a low heat, pour three tablespoons of the preparation and turn it over with the help of a spatula when you start to see small bubbles, or until the sides come off.
Topping suggestion: banana and peanut butter.
OAT AND CAROBA PANCAKES
Ingredients
- 1 cup of oat flakes
- 1 tablespoon carob powder
- 1/2 teaspoon yeast
- 1 ripe banana (small)
- 3/4 cup oat vegetable drink
Preparation
Mix all the ingredients and grind with a hand blender or in a blender.
Heat a non-stick pan over medium heat.
With the help of a spoon pour the dough to form the pancakes and let it cook for about 2 minutes.
Flip with a spatula and cook for another 2 minutes.

- 200 grams of cashew
- 4 tablespoons oat flour
- 2 eggs
- 1 tablespoon powdered yeast
- 1 tablespoon of cinnamon
- lemon or lime zest
Preparation
Grind the cashew until it forms a kind of flour. Add the rest of the ingredients and grind everything until you form a homogeneous mass.
In a skillet greased with coconut oil or olive oil, place the desired amount of dough and let it cook until the pancakes are golden.
You can accompany with fruit, cashew butter, almond or peanut, lemon zest, cinnamon, or other ingredients to your liking.
