This reserva ham is a type of high quality ham that goes through a prolonged 24 month cure process and is produced from a selected breed of pigs that are fed special diets.
The cure process of this reserva ham is similar to that of the classic cured ham, in which the flesh is salty and then hanged to dry and cure naturally. However, the fundamental difference is that the reserva ham goes through a much longer curing period, which results in a more complex flavor, softer texture and a more intense aroma.
