SIMPLE AND DELICIOUS
GRILLED SALMON WITH PASSION FRUIT SAUCE
Ingredients
- 2 salmon fillets (about 250g each)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 2 cups of fresh passion fruit juice
- 2 tablespoons of honey
- 1 tablespoon lemon juice
- 1/4 cup of water
- 1 tablespoon of corn starch
- Chopped parsley to garnish
Preparation
- Season the salmon with salt and pepper.
- Heat a nonstick skillet over medium-high heat. Add olive oil and salmon. Cook for 3-4 minutes on each side, or until cooked to desired doneness. Remove the salmon fillets and place them on a plate.
- In a small saucepan, combine the passion fruit juice, honey, lemon juice and water. Bring to a boil over medium heat.
- In a bowl mix the cornstarch with a little cold water until it forms a smooth paste. Add the paste to the pan with the passion fruit sauce and stir well. Let it boil for another 1 minute, or until it thickens.
- Serve the salmon with the hot passion fruit sauce. Sprinkle with chopped parsley and serve immediately.
- Serve alongside brown rice or quinoa and grilled vegetables for a delicious, healthy dinner.
