SIMPLE AND DELICIOUS

GRILLED SALMON WITH PASSION FRUIT SAUCE

Ingredients

  • 2 salmon fillets (about 250g each)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cups of fresh passion fruit juice
  • 2 tablespoons of honey
  • 1 tablespoon lemon juice
  • 1/4 cup of water
  • 1 tablespoon of corn starch
  • Chopped parsley to garnish

Preparation

  1. Season the salmon with salt and pepper.
  2. Heat a nonstick skillet over medium-high heat. Add olive oil and salmon. Cook for 3-4 minutes on each side, or until cooked to desired doneness. Remove the salmon fillets and place them on a plate.
  3. In a small saucepan, combine the passion fruit juice, honey, lemon juice and water. Bring to a boil over medium heat.
  4. In a bowl mix the cornstarch with a little cold water until it forms a smooth paste. Add the paste to the pan with the passion fruit sauce and stir well. Let it boil for another 1 minute, or until it thickens.
  5. Serve the salmon with the hot passion fruit sauce. Sprinkle with chopped parsley and serve immediately.
  6. Serve alongside brown rice or quinoa and grilled vegetables for a delicious, healthy dinner.
